Ingredients

  • 1 pound dried navy beans.
  • 8 cups water or ham stock.
  • 1 meaty ham bone.
  • 1 cup diced cooked ham.
  • 1 medium onion finely chopped.
  • 2 stalks celery sliced thin.
  • 1/2 teaspoon garlic powder.
  • Salt and black pepper to taste.

Instructions

Soak the Beans

  • Rinse your navy beans in cool water. Soak them in a bowl overnight. Drain the water the next morning.

Boil the Base

  • Place beans and water in a large pot. Add the ham bone and chopped onion. Bring the liquid to a rolling boil.

Simmer Slowly

  • Lower the heat to a simmer. Cover the pot with a tight lid. Cook for about two hours.

Add Extra Flavor

  • Add the diced ham and sliced celery. Season with garlic powder and black pepper. Stir everything together gently.

Final Cook

  • Simmer for thirty more minutes. The beans should be very soft. Remove the ham bone before serving.

Notes

  • Use ham stock instead of water.
  • Do not add salt until the end.
  • Mash a few beans for extra thickness.
  • Always use fresh, high-quality dried beans.
  • Let the soup sit before eating.
