Ingredients

  • 2 lbs peeled crawfish tails with fat.
  • 1 stick of unsalted butter.
  • 1 large yellow onion finely chopped.
  • 1 green bell pepper diced small.
  • 2 stalks of celery chopped well.
  • 3 cloves of garlic minced.
  • 1 can of cream of mushroom soup.
  • 1 can of cream of celery soup.
  • 1 tablespoon of Cajun seasoning blend.
  • 1/2 cup of green onions chopped.
  • 1/4 cup of fresh parsley chopped.
  • Salt and black pepper to taste.
  • Cooked white rice for serving.

Instructions

Sauté the Holy Trinity

  • Start by melting the butter in your pot. Add the onion, bell pepper, and celery. These are the "Holy Trinity" of Cajun cooking. Cook them until they are very soft. This takes about ten minutes.

Add the Garlic

  • Stir in the minced garlic now. Do not let the garlic burn. Cook it for just one minute. It should smell very fragrant.

Mix in the Soups

  • Add both cans of cream soup. Stir them into the softened vegetables. The mixture will become thick and creamy. Keep the heat on medium-low.

Season the Base

  • Add your Cajun seasoning to the pot. Add a little salt and pepper too. Stir well to combine all flavors. This creates the rich gravy base.

Add the Crawfish

  • Put the crawfish tails into the pot. Make sure to include the yellow fat. The fat adds amazing flavor. Stir gently so you don't break them.

Let it Simmer

  • Cover the pot with a lid. Let it simmer for fifteen minutes. The flavors need time to marry. Keep the heat very low.

Add Fresh Herbs

  • Stir in the green onions and parsley. These add a pop of color. They also add a fresh taste. Cook for five more minutes.

Serve it Up

  • Scoop hot rice into a deep bowl. Ladle the etouffee over the rice. Serve it while it is steaming hot.

Notes

  • Always use crawfish tails with the fat.
  • The fat provides the best Cajun flavor.
  • Do not overcook the crawfish tails.
  • They can become rubbery if cooked too long.
  • Use a low-sodium Cajun seasoning if possible.
  • This helps you control the salt levels.
  • Sauté your vegetables until they are translucent.
  • Sweet onions work great for extra flavor.
  • Serve with a side of French bread.
  • The bread helps soak up the extra sauce.
