Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup butter
  • 8 ounces sliced Provel cheese
  • 1 cup sliced white mushrooms
  • 1/2 cup white wine
  • 2 tablespoons lemon juice
  • 3 cloves minced garlic
  • 1/4 cup olive oil
  • Fresh parsley for garnish

Instructions
 

Prep the Chicken

  • First, pound the chicken breasts. Use a meat mallet. Make them even and thin. This helps them cook fast.

Set Up Coating Station

  • Use three separate bowls. Put flour in the first. Whisk eggs in the second. Mix breadcrumbs and Parmesan in the third.

Bread the Chicken

  • Dip chicken into the flour. Shake off the extra bits. Dip it into the eggs next. Finally, coat it with breadcrumbs. Press the crumbs on firmly.

Fry the Chicken

  • Heat olive oil in a pan. Place chicken in the hot oil. Cook for four minutes per side. It should be golden brown. Remove and set aside.

Cook the Mushrooms

  • Add a little butter to the pan. Sauté the mushrooms until soft. This takes about five minutes. Remove them from the pan.

Make the Wine Sauce

  • Add garlic to the same pan. Pour in the white wine. Let it simmer and reduce. This builds a great flavor.

Add Butter and Lemon

  • Whisk in the remaining butter slowly. Add the fresh lemon juice. The sauce should look glossy. Keep the heat low.

Melt the Cheese

  • Place chicken back in the pan. Top each piece with Provel cheese. Add the cooked mushrooms on top. Cover the pan for one minute. The cheese will melt perfectly.

Serve and Garnish

  • Pour the sauce over the chicken. Sprinkle with fresh parsley. Serve it while it is hot.
