- 12 slices WHITE BREAD
- 50 g UNSALTED BUTTER
- 3 tbsp DEMERARA SUGAR
- 50 g SULTANAS
- 300 ml WHOLE MILK
- 300 ml HEAVY CREAM
- 1 whole VANILLA BEAN
- 4 large EGG YOLKS
- 1 tsp CINNAMON
Slice your white bread into even triangles. Remove the crusts if you want a softer feel. Spread plenty of butter on each bread slice.
Grease your large baking dish with more butter. Arrange the bread slices in neat, overlapping rows. Sprinkle the sweet sultanas between every layer of bread.
Heat the milk and cream in a pan. Do not let the liquid boil or burn. Scrape the vanilla bean seeds into the warm milk.
Whisk the egg yolks and sugar together well. Pour the warm milk slowly into the egg mixture. Stir constantly so the eggs do not scramble.
