Ingredients
  

  • 12 slices WHITE BREAD
  • 50 g UNSALTED BUTTER
  • 3 tbsp DEMERARA SUGAR
  • 50 g SULTANAS
  • 300 ml WHOLE MILK
  • 300 ml HEAVY CREAM
  • 1 whole VANILLA BEAN
  • 4 large EGG YOLKS
  • 1 tsp CINNAMON

Instructions
 

  • Slice your white bread into even triangles. Remove the crusts if you want a softer feel. Spread plenty of butter on each bread slice.
  • Grease your large baking dish with more butter. Arrange the bread slices in neat, overlapping rows. Sprinkle the sweet sultanas between every layer of bread.
  • Heat the milk and cream in a pan. Do not let the liquid boil or burn. Scrape the vanilla bean seeds into the warm milk.
  • Whisk the egg yolks and sugar together well. Pour the warm milk slowly into the egg mixture. Stir constantly so the eggs do not scramble.
  • Pour the custard over the bread slices slowly. Let the bread soak for twenty minutes. This makes the pudding very moist and soft.
  • Sprinkle the top with extra sugar and cinnamon. Bake at 180°C for about thirty minutes. Serve it warm while the top is still crispy.

  • Use stale bread to soak up more liquid.
  • Do not boil the cream or eggs will curdle.
  • Let the pudding rest before you slice it.
  • Add lemon zest for a bright and fresh flavor.
  • Use brioche bread for a much richer taste.
