Equipment

  • Sharp Chefs Knife
  • Large Roasting Pan
  • Meat thermometer
  • Small mixing bowl.
  • Kitchen String
  • Cutting board
  • Aluminium Foil

Ingredients

  • 3 lbs Pork Loin Roast
  • 2 tbsp Olive Oil
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Thyme
  • 3 cloves Garlic
  • 1 tbsp Sea Salt
  • 1 tsp Black Pepper
  • 2 tbsp Butter
  • 1/2 cup White Wine
  • 1 cup Brussel Sprouts as a side

Instructions

1. Prep the Meat

  • Take the pork out of the fridge early. Let it reach room temperature for thirty minutes. This helps the meat cook very evenly. Pat the skin dry with paper towels. Dry skin makes the best crackling.

2. Score the Fat

  • Use your sharp knife on the fat layer. Make shallow cuts in a diamond pattern. Do not cut into the actual meat. This lets the fat melt away beautifully.

3. Make the Herb Rub

  • Chop the rosemary and thyme very finely. Mince the garlic cloves into a paste. Mix them with olive oil and salt. Add plenty of black pepper to the mix.

4. Season the Roast

  • Rub the herb mix all over the pork. Push the herbs into the fat cuts. This adds flavor deep inside the meat. Use your hands for the best coverage.

5. Sear the Pork

  • Heat a large pan on the stove. Brown the pork on all sides quickly. This locks in all the tasty juices. It creates a beautiful golden color.

6. Roast in the Oven

  • Place the pork in the roasting pan. Put it in a hot oven at 400 degrees. Cook until the center reaches 145 degrees. This usually takes about an hour.

7. Deglaze the Pan

  • Remove the meat from the roasting pan. Pour in the white wine and butter. Scrape the bottom to get the brown bits. This makes a delicious, simple sauce.

8. Rest the Meat

  • Move the pork to a clean board. Cover it loosely with some silver foil. Let it rest for fifteen minutes. Resting keeps the meat very juicy.

Notes

➔ Always dry the pork skin thoroughly before cooking.
➔ Season the meat very generously with sea salt.
➔ Do not overcook the meat or it gets dry.
➔ Use a thermometer to ensure the perfect temperature.
➔ Let the meat rest before you start slicing.
➔ Use fresh herbs instead of dried for better taste.
➔ Keep the oven door closed while the pork roasts.
