- 8 pieces CHICKEN THIGHS
- 150 g SMOKED BACON
- 500 ml RED WINE
- 200 ml CHICKEN STOCK
- 200 g BUTTON MUSHROOMS
- 12 PEARL ONIONS
- 3 cloves GARLIC
- 2 tbsp PLAIN FLOUR
- 1 sprig FRESH THYME
- 1 tbsp VEGETABLE OIL
Dust your chicken pieces in the plain flour. Shake off any extra flour carefully. This helps the skin brown very well.
Heat oil in your large frying pan. Fry the chicken until the skin is golden. Move the chicken to your casserole pot.
Fry the bacon and onions in the pan. Cook them until the bacon is crispy. Add the garlic for just one minute.
