- 700 g POTATOES
- 300 g WHITE FISH FILLETS
- 200 g SMOKED HADDOCK
- 150 g SALMON FILLETS
- 500 ml SKIMMED MILK
- 2 tbsp CORNFLOUR
- 2 large LEEKS
- 1 bunch FRESH PARSLEY
- 1 tbsp LEMON JUICE
- 25 g LOW FAT SPREAD
Peel your potatoes and cut into chunks. Place them in a large pot of water. Boil them until they are soft and tender.
Drain the potatoes well in a colander. Add the low-fat spread and some milk. Mash them until the texture is very smooth.
Chop the fish into small, bite-sized cubes. Place the fish pieces into your ovenproof dish. Scatter the chopped leeks over the fresh fish.
Mix the cornflour with a little cold milk. Heat the rest of the milk in a pan. Whisk in the cornflour mix to thicken it.
Add the fresh parsley and lemon juice. Pour this white sauce over the raw fish. Stir it gently to coat every single piece.
Spoon the mashed potato over the fish mix. Spread it out to cover the whole dish. Use a fork to make small decorative peaks.
Put the dish into a hot oven. Bake it until the top is golden. The sauce should be bubbling at the edges.
