- 500 g POTATOES
- 3 large LEEKS
- 50 g BUTTER
- 800 ml VEGETABLE STOCK
- 200 ml WHOLE MILK
- 1 tsp SALT
- 1/2 tsp BLACK PEPPER
Wash the leeks very carefully under cold water. Cut them into thin rounds. Peel and chop the potatoes into small cubes.
Melt the butter in your large soup pot. Keep the heat on a medium setting. Do not let the butter turn brown.
Add the sliced leeks to the melted butter. Stir them well with your wooden spoon. Let them soften for about five minutes.
Toss the potato cubes into the pot now. Stir them to coat with the butter. Cook them for two more minutes.
Pour the vegetable stock over the vegetables. Add a pinch of salt and pepper. Bring the liquid to a gentle boil.
Lower the heat to a simmer. Put a lid on the pot. Cook until the potatoes are very soft.
Turn off the heat once potatoes are tender. Use your stick blender to blend the soup. Make it as smooth as you like.
Pour in the milk and stir well. Heat the soup again gently on low. Do not let it boil after adding milk.
