Ingredients
  

  • 8 CHICKEN THIGHS
  • 2 tbsp SMOKED PAPRIKA
  • 2 ONIONS
  • 2 RED BELL PEPPERS
  • 3 GARLIC CLOVES
  • 400 ml CHICKEN STOCK
  • 150 ml SOUR CREAM
  • 2 tbsp OLIVE OIL
  • 1 pinch SALT
  • 1 pinch BLACK PEPPER

Instructions
 

  • Season the chicken thighs with salt and pepper. Heat the olive oil in your large pan. Place the chicken in the hot oil carefully.
  • Brown the chicken on both sides until golden. Remove the chicken and set it aside now. This keeps the juices inside the meat.
  • Add the sliced onions to the same hot pan. Fry them until they are soft and clear. Add the peppers and garlic to the onions.
  • Stir in the smoked paprika and cook shortly. Do not let the spice burn or turn bitter. Pour in the chicken stock and stir well.
  • Put the chicken back into the savory liquid. Cover the pan with a tight-fitting lid now. Simmer gently on low heat for twenty minutes.
  • Remove the lid and check the chicken meat. It should be cooked through and very tender. Stir in the sour cream very slowly now.
  • Let the sauce warm through but do not boil. Boiling can make the sour cream split apart. Serve the dish while it is steaming hot.

Notes

  • Use fresh spices for the strongest smoky flavor.
  • Do not boil the sauce after adding cream.
  • Brown the chicken well for a better color.
  • Slice onions very thin so they soften quickly.
  • Use a heavy pan to distribute heat evenly.
  • Taste the sauce before serving to adjust salt.
