Measuring spoons
- 8 CHICKEN THIGHS
- 2 tbsp SMOKED PAPRIKA
- 2 ONIONS
- 2 RED BELL PEPPERS
- 3 GARLIC CLOVES
- 400 ml CHICKEN STOCK
- 150 ml SOUR CREAM
- 2 tbsp OLIVE OIL
- 1 pinch SALT
- 1 pinch BLACK PEPPER
Season the chicken thighs with salt and pepper. Heat the olive oil in your large pan. Place the chicken in the hot oil carefully.
Brown the chicken on both sides until golden. Remove the chicken and set it aside now. This keeps the juices inside the meat.
Add the sliced onions to the same hot pan. Fry them until they are soft and clear. Add the peppers and garlic to the onions.
Stir in the smoked paprika and cook shortly. Do not let the spice burn or turn bitter. Pour in the chicken stock and stir well.
Put the chicken back into the savory liquid. Cover the pan with a tight-fitting lid now. Simmer gently on low heat for twenty minutes.
Remove the lid and check the chicken meat. It should be cooked through and very tender. Stir in the sour cream very slowly now.
Let the sauce warm through but do not boil. Boiling can make the sour cream split apart. Serve the dish while it is steaming hot.
- Use fresh spices for the strongest smoky flavor.
- Do not boil the sauce after adding cream.
- Brown the chicken well for a better color.
- Slice onions very thin so they soften quickly.
- Use a heavy pan to distribute heat evenly.
- Taste the sauce before serving to adjust salt.
- Add a splash of water if too thick.
