Ingredients
  

  • 500 g Puff Pastry
  • 2 Large Salmon Fillets
  • 200 g Fresh Spinach
  • 100 g Cream Cheese
  • 1 Fresh Lemon
  • 1 Bunch Fresh Dill
  • 1 Large Egg
  • 1 Pinch Nutmeg
  • Salt and Pepper to taste

Instructions
 

Prepare the Oven

  • Heat your oven to 200C. Let it get very hot first. This helps the pastry puff up well.

Cook the Spinach

  • Put the spinach in a small pan. Add a tiny splash of water. Cook it until it turns soft.

Drain the Spinach

  • Squeeze all the water out of the spinach. This prevents a soggy pastry in the end. Use a clean cloth for this.

Make the Filling

  • Put the spinach in a mixing bowl. Add the cream cheese and fresh dill. Stir in the lemon zest and spices.

Prepare the Pastry

  • Roll out your cold puff pastry. Cut it into two large rectangles. Make them bigger than your salmon fillets.
