- 500 g SAUSAGE MEAT
- 320 g PUFF PASTRY
- 1 small RED ONION
- 1 tbsp FRESH SAGE
- 50 g BREADCRUMBS
- 1 large EGG
- 1 pinch SALT AND PEPPER
Peel and chop your red onion very small. Sauté the onions in a pan until soft. Let the onions cool down before the next step.
Put the meat into a large mixing bowl. Add the cooled onions and the chopped sage. Mix everything together using your clean hands now.
Dust your clean kitchen counter with some flour. Roll out the puff pastry into a rectangle. Cut the pastry into two long equal strips.
Shape the meat into two long even logs. Place one log down the center of each strip. Make sure the meat goes from end to end.
Beat the egg in a small cup now. Brush the edges of the pastry with egg. This acts like glue to keep rolls closed.
Fold the pastry over the meat filling carefully. Press the edges down with a small fork. Cut the long rolls into smaller bite-sized pieces.
Place the rolls on your lined baking tray. Brush the tops with the remaining egg wash. Bake at 200°C for twenty-five minutes until gold.
- Keep your puff pastry very cold before using.
- Do not overfill the pastry with too much meat.
- Use a fork to crimp the edges very tightly.
- Let the rolls cool for five minutes after baking.
- Check the meat is cooked through before serving them.
