- 200 g dried DATES
- 200 ml WATER boiling
- 1 tsp BICARBONATE OF SODA
- 75 g unsalted BUTTER
- 2 large EGGS
- 175 g SELF-RAISING FLOUR
- 175 g dark MUSCOVADO SUGAR
- 1 tsp VANILLA EXTRACT
- 1 tbsp BLACK TREACLE
- 150 ml DOUBLE CREAM for sauce
- 150 g BUTTER for sauce
- 150 g MUSCOVADO SUGAR for sauce
Chop your dried dates into very small pieces. Put them in a heatproof bowl right now. Pour boiling water over the dates to soften them.
Add the bicarbonate of soda to the soaking dates. Let them sit for about ten minutes. This makes the dates very soft and mushy.
Cream the butter and sugar in a large bowl. Use your whisk until the mix is fluffy. This step adds air to your pudding base.
Add your eggs one at a time. Whisk well after you add each egg. This prevents the mixture from curdling or separating.
Sift the flour into the wet mixture slowly. Fold it in gently with a large spoon. Do not overmix the batter at this stage.
Stir in the soaked dates and the water. The batter will look quite thin and liquid. This is normal for a very moist sponge.
Pour the batter into your greased baking tin. Smooth the top with a small spatula. Bake until the sponge feels firm and springy.
Make the sauce in a small pan now. Melt butter, sugar, and cream over low heat. Boil it for one minute until it thickens.
