Wooden spoon
- 2 large PORK TENDERLOINS
- 100 g BREADCRUMBS
- 1 medium ONION
- 1 small APPLE
- 2 tbsp BUTTER
- 6 leaves FRESH SAGE
- 1 tsp SALT
- 1 tsp BLACK PEPPER
Lay your pork tenderloin on a flat cutting board. Use your knife to cut a long slit lengthwise. Do not cut all the way through the meat.
Open the meat like a flat book now. Cover it with a piece of plastic wrap. Gently pound it to make the thickness even.
Melt the butter in your frying pan over heat. Add the onions and cook until they are soft. Stir in the sage, apples, and fresh breadcrumbs.
Spread the stuffing mix over the flat pork meat. Leave a small gap around the very edges. This prevents the filling from falling out later.
Roll the pork up tightly like a big cigar. Use your kitchen string to tie it every inch. This holds the shape during the entire roasting time.
Sear the rolled pork in the hot frying pan. Make sure every side turns a nice golden brown. This creates a wonderful crust on the meat.
Place the meat on your large baking tray. Put it in a hot oven for thirty minutes. Check that the meat is cooked all the way.
- Always let the meat rest for ten minutes first.
- Do not overfill the pork with too much stuffing.
- Use fresh sage instead of dried for better scent.
- Tie the string firm but do not pinch meat.
- Pat the pork dry before searing for better crust.
- Use a meat thermometer to check the internal heat.
- Dice the apples very small for an even mix.
- Butter the baking tray to prevent the meat sticking.
