  • Glass Measuring Jug
  • Set of Oven Mitts
  • Small Fine Sieve
  • Large Metal Spoon
  • Wire cooling rack

Ingredients

  • 200 g Plain Flour
  • 3 Large Eggs
  • 300 ml Full Fat Milk
  • Sunflower Oil for the tin
  • Pinch of Salt

Instructions

Preheat Your Oven

  • Turn your oven to high heat. It must be very hot. Set it to 220 degrees. This heat creates the rise.

Prepare the Tin

  • Get your muffin tin ready. Put a little oil in each hole. Use about one teaspoon per hole.

Heat the Oil

  • Place the tin in the oven. Let the oil get very hot. It should be slightly smoking. This is a big secret.

Sift the Flour

  • Put your flour into the bowl. Use a sieve for this. Add a pinch of salt now.

Make a Well

  • Make a hole in the flour. This is called a well. It helps with the mixing.

Add the Eggs

  • Crack the eggs into the hole. Use a whisk to mix them. Start from the middle.

Pour the Milk

  • Slowly add the milk to the bowl. Keep whisking the mix well. Make it very smooth.

Remove All Lumps

  • Whisk until the lumps are gone. The batter should look like cream. It should be quite thin.

Rest the Batter

  • Let the mix sit for a while. Ten minutes is usually enough. This helps the flour hydrate.

Fill the Tin

  • Take the hot tin out. Do this very carefully. Pour batter into the hot oil.

Listen for Sizzle

  • The batter should sizzle in the oil. Fill each hole half way. Work as fast as you can.

Bake Until Golden

  • Put the tin back in. Bake for twenty minutes. The puddings will grow very tall.

Keep the Door Shut

  • Do not open the oven door. Cold air will ruin the rise. Watch through the glass.

Cool and Serve

  • Take them out when golden brown. Place them on a rack. Serve them with hot gravy.
