Ingredients
  

  • 1 pound dried black-eyed peas
  • 6 cups chicken broth
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 1 ham hock optional, for flavor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Instructions
 

Rinse the peas.

  • Wash the black-eyed peas well. Remove any bad peas.

Soak the peas.

  • Put peas in a large bowl. Cover with water. Let them soak overnight. Or quick soak: boil for 2 minutes, then soak for 1 hour.

Sauté vegetables.

  • Heat olive oil in a pot. Add onion, carrots, and celery. Cook until soft. This takes about 5 minutes.

Add garlic

  • Stir in the minced garlic. Cook for one more minute. It smells so good.

Combine ingredients.

  • Drain the soaked peas. Add them to the pot. Pour in the chicken broth. Add the ham hock, if using.

Season the dish

  • . Add salt and black pepper. Stir everything together.

Simmer the peas.

  • Bring to a boil. Then reduce heat to low. Cover and simmer. Cook for 1 to 1.5 hours. Peas should be tender.

Serve and enjoy.

  • Remove the ham hock. Shred meat if you like. Serve hot.

Notes

  • Use good quality broth. It adds much flavor.
  • Don't skip the soaking step. It helps peas cook evenly.
  • Taste and adjust seasoning. Add more salt or pepper.
  • A ham hock makes it richer. Bacon or smoked turkey also work.
  • Serve with cornbread. It's a classic pairing.
