Equipment

  • Large mixing bowl
  • Deep fryer or heavy pot.
  • Tongs
  • Wire cooling rack
  • Small saucepan
  • Paper towels

Ingredients

  • 2 pounds chicken wings split.
  • 1/2 cup oyster sauce.
  • 1/4 cup soy sauce.
  • 2 tablespoons honey.
  • 1 tablespoon minced ginger.
  • 2 cloves minced garlic.
  • 1 cup cornstarch for coating.
  • Vegetable oil for frying.
  • Green onions for garnish.

Instructions

  • Wash the wings and pat them very dry. Dry skin makes the wings much crispier.
  • Toss wings in cornstarch until fully covered. Shake off any extra powder gently.
  • Heat oil to 350°F in your pot. Fry wings for 8 to 10 minutes. They should be golden brown and crunchy.
  • Place fried wings on a wire rack. This keeps them from getting soggy.
  • Mix oyster sauce, soy, honey, ginger, and garlic. Simmer in a saucepan for 3 minutes.
  • Put wings in a bowl with warm sauce. Toss well to coat every single wing.

Notes

  • Use fresh ginger for the best spicy kick.
  • Do not crowd the fryer while cooking.
  • Fry in small batches for extra crunch.
  • Always serve them hot for the best texture.
