Ingredients

  • 2 pounds of fresh ripe strawberries.
  • 1 cup of granulated white sugar.
  • 1 cup of cold water.
  • 3 tablespoons of cornstarch.
  • 3 ounces of strawberry flavored gelatin.
  • 1 pre-baked 9-inch pie crust.
  • Whipped cream for the topping.

Instructions

Prepare the Crust

  • First, bake your pie crust. Let it cool completely. A cold crust stays crunchy.

Clean the Berries

  • Wash your strawberries well. Remove the green stems. Pat them dry with a towel. Dry berries help the glaze stick.

Arrange the Fruit

  • Place the berries in the cooled crust. Point the tips upward. Pack them tightly together.

Mix Sugar and Water

  • Put sugar and water in a saucepan. Whisk them together until smooth.

Add the Cornstarch

  • Add cornstarch to the pan. Whisk it well. Ensure there are no white lumps.

Boil the Mixture

  • Cook over medium heat. Stir it constantly. Let it reach a full boil.

Thicken the Glaze

  • Boil for about two minutes. The liquid will turn clear. It will look very thick.

Add the Gelatin

  • Remove the pan from the heat. Stir in the strawberry gelatin. Mix until it dissolves fully.

Cool the Glaze

  • Let the glaze cool for ten minutes. It should be warm but not hot.

Pour Over Berries

  • Slowly pour glaze over the berries. Cover every single strawberry.

Chill the Pie

  • Put the pie in the fridge. Let it set for three hours. This makes it easy to slice.

Add the Topping

  • Top with whipped cream before serving. Enjoy your delicious homemade pie!

Notes

  • Use the freshest berries you can find.
  • Make sure the glaze is not boiling hot.
  • Dry your berries very well before using.
  • Store the pie in the refrigerator.
  • Use a glass dish to see the layers.
  • Don't skip the cornstarch. It holds everything together.
  • Add a little lemon juice for extra tang.
  • Real whipped cream tastes much better than canned.
  • Let the crust cool before adding fruit.
  • Slice with a very sharp, wet knife.
