Ingredients

  • 1 1/2 cups all-purpose flour.
  • 1 1/2 teaspoons baking powder.
  • 1/2 teaspoon salt.
  • 6 tablespoons unsalted butter room temperature.
  • 3/4 cup granulated sugar.
  • 1 large egg.
  • 1 teaspoon pure vanilla extract.
  • 1/2 cup whole milk.
  • 2 cups fresh blueberries rinsed and dried.

Instructions

Prep Your Oven and Pan

  • Preheat your oven to 350 degrees Fahrenheit. Grease your 9-inch square pan with butter. You can also use parchment paper for easy lifting.

Make the Streusel Topping

  • Mix flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter to the bowl. Use your fingers to rub the butter in. The mixture should look like coarse crumbs. Put this in the fridge until needed.

Mix Dry Ingredients

  • In a medium bowl, whisk the flour together. Add the baking powder and the salt. Set this bowl aside for a moment.

Cream Butter and Sugar

  • In a large bowl, beat the softened butter. Add the granulated sugar slowly. Beat until the mixture is light and fluffy. This usually takes about three minutes.

Add Egg and Vanilla

  • Add the egg to the butter mixture. Mix it well. Then, stir in the vanilla extract. Scrape down the sides of the bowl.

Combine Wet and Dry

  • Add half of the dry flour mixture. Pour in the milk and mix slowly. Add the rest of the flour mixture. Do not overmix the batter.

Fold in Blueberries

  • Use a spatula to fold in the berries. Be very gentle so they do not burst. This keeps the cake pretty and white.

Assemble and Bake

  • Spread the batter into your prepared pan. Sprinkle the cold streusel topping over the top. Bake for 40 to 45 minutes.

Cool and Serve

  • Check the center with a toothpick. It should come out clean. Let the cake cool on a wire rack. Serve it warm or at room temperature.

Notes

  • Fresh berries are always the best choice here.
  • If you use frozen berries, do not thaw them.
  • Thawed berries will turn your cake batter purple.
  • Always use room temperature butter for the cake.
  • Cold butter will not cream properly with sugar.
  • For the streusel, use very cold butter.
  • This makes the topping nice and crunchy.
  • Do not overmix the cake batter at all.
  • Overmixing makes the cake tough and chewy.
  • Use a light hand when folding in the blueberries.
  • You want them whole and juicy inside.
  • Serve this with a scoop of vanilla ice cream.
  • The cold ice cream melts into the warm cake.
  • It tastes like a dream on a plate.
