Equipment

  • Wire cooling rack
  • Aluminum foil
  • Small mixing bowl.
  • Pastry brush or spoon.

Ingredients
  

  • 12 slices of thick-cut bacon.
  • 1/2 cup of packed light brown sugar.
  • 1/4 teaspoon of cayenne pepper optional.
  • 2 tablespoons of maple syrup.
  • Fresh cracked black pepper to taste.

Instructions
 

  • Preheat your oven to 375°F. Line your pan with foil.
  • Place a wire rack on the baking sheet. This helps the bacon get crispy.
  • Mix brown sugar and spices in a bowl. Add the maple syrup and stir well.
  • Lay bacon strips on the wire rack. Rub the sugar mixture onto each slice.
  • Bake for 15 to 20 minutes. Watch closely so the sugar does not burn.
  • Remove from the oven. Let it sit for 5 minutes to harden.

Notes

  • Always use thick-cut bacon for this recipe.
  • Thin bacon might burn too fast.
  • Make sure to use a wire rack.
  • This allows heat to reach the bottom.
  • Do not skip the foil lining.
  • It makes cleanup much faster.
