Ingredients
  

  • For the Crust
  • 1.5 cups graham cracker crumbs.
  • 1/4 cup granulated sugar.
  • 6 tablespoons melted unsalted butter.
  • For the Filling
  • 3 packages 8 oz softened cream cheese.
  • 1 cup granulated sugar.
  • 3 large room-temperature eggs.
  • 3/4 cup fresh Key lime juice.
  • 1 tablespoon lime zest.
  • 1/2 cup sour cream.
  • 1 teaspoon vanilla extract.

Instructions
 

Prepare the Graham Cracker Crust

  • Heat your oven to 325 degrees. Mix crumbs, sugar, and melted butter. Press the mixture into your pan. Bake for 10 minutes then cool. This makes the base nice and crunchy.

Beat the Cream Cheese

  • Place softened cheese in a large bowl. Beat it until it is very smooth. Add sugar and mix it again. Make sure there are no lumps left. Smooth cheese means a creamy cheesecake.

Add the Eggs

  • Add eggs one at a time. Mix on a low speed now. Do not overmix the batter here. Overmixing adds too much air. Air causes cracks in the top.

Mix in Citrus and Cream

  • Pour in the fresh lime juice. Add the zest and vanilla next. Fold in the sour cream gently. This adds a lovely tangy flavor. The batter should look glossy and thick.

Bake in a Water Bath

  • Wrap the pan in heavy foil. Place it inside a roasting pan. Fill the outer pan with hot water. Bake for about 55 to 60 minutes. The center should still jiggle slightly.

Cool and Chill

  • Turn off the oven and open door. Let it sit for one hour. Then, move it to the fridge. Chill for at least six hours. Cold cheesecake slices much better.
