Ingredients
  

  • 1 lb ELBOW MACARONI
  • 6 slices WHITE BREAD
  • 5 tbsp UNSALTED BUTTER
  • 5 1/2 cups WHOLE MILK
  • 1/2 cup ALL PURPOSE FLOUR
  • 2 tsp SALT
  • 1/4 tsp NUTMEG
  • 1/4 tsp BLACK PEPPER
  • 1/4 tsp CAYENNE PEPPER
  • 4 1/2 cups SHARP CHEDDAR CHEESE
  • 2 cups GRUYERE CHEESE

Instructions
 

Step 1:

  • Preheat your oven to 375 degrees Fahrenheit now. Butter your large baking dish very well. This prevents the pasta from sticking to the sides.

Step 2:

  • Boil a large pot of salted water. Add the elbow macaroni to the boiling water. Cook it for two minutes less than package.

Step 3:

  • Drain the pasta in a colander very well. Rinse it with cold water to stop cooking. Set the pasta aside for a few minutes.

Step 4:

  • Melt the butter in your large saucepan. Add the flour and whisk it very well. Cook this paste for about one minute total.

Step 5:

  • Slowly pour the milk into the saucepan now. Keep whisking to keep the sauce very smooth. Bring it to a gentle boil for thickness.

Step 6:

  • Remove the pan from the heat very carefully. Add the spices and most of the cheese. Stir until the cheese is completely melted in.

Step 7:

  • Pour the cheese sauce over the cooked macaroni. Stir it well to coat every single noodle. Transfer the mixture into your prepared baking dish.

Step 8:

  • Top the pasta with the remaining grated cheese. Add the fresh breadcrumbs over the cheese layer. Drizzle some extra melted butter on the top.

Step 9:

  • Place the dish in the hot oven now. Bake for 30 minutes until it is golden. Let it rest for five minutes before serving.

Notes

Use high quality cheese for the best possible flavor.
Do not overcook the pasta in the boiling water.
Grating your own cheese makes the sauce very smooth.
Let the dish rest to thicken the cheese sauce.
Add a bit more milk for an extra creamy sauce.
