Ingredients
  

  • 3 1/4 cups All-purpose flour.

  • 1/4 teaspoon Ground allspice.
  • 1 teaspoon Baking soda.
  • 1/2 teaspoon Baking powder.
  • 2 1/4 cups Sugar.
  • 1 cup Vegetable oil.
  • 3 large Eggs.
  • 1 can 15 ounces Pumpkin puree.

Instructions
 

Preheat the Oven

  • Set your oven to 350 degrees Fahrenheit. This ensures the oven is hot enough for baking. Butter your two loaf pans very well. You can also dust them with a little flour. This stops the bread from sticking to the sides.

Mix Dry Ingredients

  • Get a large bowl for your dry items. Add the flour, salt, and all the spices. Whisk in the baking soda and baking powder too. Make sure there are no large lumps of flour. This helps the bread rise evenly in the oven.

Combine Sugar and Oil

  • Put the sugar and oil in a separate bowl. Use your electric mixer to beat them together. The mixture should look thick and well combined. This takes about one or two minutes on medium.

Add Eggs and Pumpkin

  • Add the three large eggs to the sugar mixture. Beat them in one at a time. Then, fold in the entire can of pumpkin puree. Keep mixing until the batter is a bright orange. It should look very smooth and smell amazing.

Mix Everything Together

  • Turn your mixer to the lowest speed. Slowly add the dry flour mixture to the wet. Mix until the white flour just disappears. Do not overmix the batter or it gets tough. Use a spatula to scrape the bottom once.

Fill the Pans and Bake

  • Divide the batter between the two prepared pans. Smooth the tops with the back of a spoon. Place them in the oven for about one hour. A toothpick should come out clean from the center. Let them cool before you try to slice.
