- 500 g COURGETTES
- 1 large ONION
- 25 g BUTTER
- 700 ml VEGETABLE STOCK
- 100 ml DOUBLE CREAM
- 1 tsp SALT
- 1/2 tsp BLACK PEPPER
Wash the fresh courgettes under cold water. Cut off the ends with your knife. Chop them into small cubes now.
Peel the onions and chop them finely. Melt the butter in the large pot. Add the onions to the hot butter.
Cook the onions on medium heat. Wait until they are soft and clear. This takes about five minutes usually.
Add the courgette cubes to the pot. Stir them well with the wooden spoon. Cook them for five more minutes.
Pour the vegetable stock into the pot. Let the liquid reach a boil. Then turn the heat down low.
Simmer the soup for fifteen minutes. The courgettes must be very soft. Check them with a small fork.
Take the pot off the heat. Use your blender to make it smooth. Keep blending until no lumps remain.
Stir in the heavy double cream. Season the soup with salt and pepper. Heat it gently before you serve.
