Equipment

  • Large mixing bowl
  • Electric Hand Whisk
  • Citrus Juicer
  • Fine Grater
  • Spatula
  • Sieve

Ingredients

  • 250 g Unsalted Butter
  • 500 g Icing Sugar
  • 1 large Lemon zest and juice
  • 1 tbsp Milk optional

Instructions

1. Soften the Butter

  • Place your butter in a large bowl. It must be very soft. This prevents lumps in your frosting.

2. Sift the Sugar

  • Sieve the icing sugar into the bowl. This keeps the buttercream very smooth. Do not skip this step.

3. Mix Slowly

  • Turn your whisk on a low speed. Mix the butter and sugar together. This stops a sugar cloud from forming.

4. Add Lemon Zest

  • Grate the yellow skin of the lemon. Do not use the white part. Add it to the bowl.

5. Add Lemon Juice

  • Squeeze the fresh juice into the mix. Whisk again on a high speed. It should look pale and fluffy.

6. Adjust the Texture

  • Check the thickness of your frosting. Add milk if it is too stiff. Whisk one last time.

Notes

➜ Use room temperature butter for a very smooth finish.
➜ Sift the sugar to avoid tiny hard lumps.
➜ Use fresh lemons instead of bottled juice for flavor.
➜ Beat the butter alone first to make it creamy.
➜ Add juice slowly to keep the mix from curdling.
➜ Taste as you go to find the perfect zing.
