Instructions
Sift the flour into a large mixing bowl and add salt.
Make a well in the center and crack in the eggs.
Whisk slowly, gradually adding the milk until smooth.
Let the batter rest for at least 30 minutes.
Preheat your oven to 220°C (425°F).
Add a teaspoon of oil to each hole of the muffin tin.
Heat the tin in the oven until the oil is smoking hot.
Pour the batter quickly into the hot oil.
Bake for 20-25 minutes until puffed and golden brown.
Notes
Do not open the oven door while they are baking!
