Equipment

  • Large Bowl:
  • Deep Fryer
  • Paper towels
  • Tongs
  • Measuring spoons
  • Wire Rack

Ingredients

  • 2 lbs Chicken wings
  • 1 cup All-purpose flour
  • 2 tsp Cayenne pepper
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/4 cup Butter
  • 1/2 cup Hot sauce
  • 4 cups Vegetable oil

Instructions

Prepare the Chicken

  • First, wash your chicken wings. Pat them dry with paper towels. Dry wings get more crispy. This step is very important. Do not skip it.

Mix the Dry Coating

  • Get your large bowl ready. Add the flour and all the spices. Stir them until they look even. The flour should look a bit red.

Coat the Wings

  • Put the wings in the flour mix. Press the flour onto the skin. Make sure every spot is covered. Shake off the extra flour. Put them on a tray.

Let the Wings Rest

  • Let the coated wings sit for ten minutes. This helps the flour stick better. It will not fall off in oil. The coating becomes like a paste.

Heat the Frying Oil

  • Fill your pot with oil. Heat it until it is very hot. You can test it with a crumb. The oil should bubble right away.

Fry the Chicken Batches

  • Drop the wings into the hot oil. Do not put too many at once. Fry them for about ten minutes. They should look dark golden brown.

Drain the Extra Oil

  • Take the wings out with tongs. Place them on the paper towels. Let the oil soak into the paper. This keeps them from being heavy.

Make the Spicy Sauce

  • Melt the butter in a small pan. Add the hot sauce to the butter. Stir it until it is smooth. The sauce will look bright and glossy.

Toss the Wings

  • Put the fried wings in a clean bowl. Pour the butter sauce over them. Shake the bowl to coat the wings. Do this while they are hot.

Serve and Enjoy

  • Place the wings on a serving plate. Add some celery sticks on the side. Your wings are now ready to eat. Enjoy your spicy homemade meal!
