Ingredients

  • 1 lb Ahi Tuna Steak
  • 2 tbsp Sesame Seeds
  • 1 tsp Black Pepper
  • 2 tbsp Cooking Oil
  • 1/4 cup Soy Sauce
  • 1 tsp Ginger Paste
  • 1 tsp Wasabi Paste

Instructions

Dry the Tuna

  • Take your fish out of the fridge. Pat it dry with a paper towel. Dry fish gets a better crust.

Mix the Crust

  • Put sesame seeds and pepper in a bowl. Mix them well. Press the fish into the seeds firmly.

Heat the Pan

  • Put your pan on high heat. Add a little oil. Wait for the oil to smoke a little.

Sear the Fish

  • Place the tuna in the hot pan. Cook for one minute per side. Do not overcook the fish.

Slice and Serve

  • Let the fish rest for two minutes. Use a sharp knife. Cut it into thin, beautiful slices.

Notes

➜ Use very fresh tuna for the best possible taste.
➜ Make sure the pan is very hot before cooking.
➜ Do not move the fish while it is searing.
➜ Slice against the grain for a very tender bite.
➜ Serve with cold soy sauce for a great contrast.
➜ Add a little lime juice for a bright finish.
