Portillo’s Sweet Peppers Recipe

If you love Italian beef, you know Portillo’s. Their sweet peppers are legendary. They are soft, mild, and full of flavor.

Ingredients
  

  • 4 large green bell peppers.
  • 1/2 cup vegetable oil.
  • 1/2 cup water.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • 1/2 teaspoon dried oregano.
  • 1 tablespoon sugar optional.

Instructions
 

Wash and Prep

  • Wash the green peppers under cool water. Pat them dry with a towel.

Slice the Peppers

  • Cut the peppers into long, thin strips. Remove all seeds and white ribs.

Heat the Oil

  • Put the oil in your large skillet. Turn the heat to medium.

Add Peppers to Pan

  • Carefully place the pepper strips into the oil. Stir them to coat every piece.

Add Spices and Water

  • Pour in the water and add all spices. The water helps the peppers soften.

Simmer Until Tender

  • Cover the pan with a lid. Cook for 15 to 20 minutes. Stir them occasionally.

Cool and Serve

  • Remove the lid. Let the liquid reduce slightly. Serve warm on your favorite sandwich.

Notes

  • Use fresh, firm green peppers for best results.
  • Do not overcook them until they fall apart.
  • Add a splash of beef broth for extra flavor.
  • Store leftovers in the fridge for three days.
