Preheat Your Oven

  • Set your oven to 400 degrees Fahrenheit. A hot oven is key for roasting. Let it get very warm before starting.

Prepare the Carrots

  • Wash your carrots under cold running water. Scrub them well to remove any dirt. You can peel them if you like. I prefer to keep the skins on. Trim the green tops off the ends.

Slice the Large Carrots

  • Keep small carrots whole for a rustic look. Slice very thick carrots in half lengthwise. Try to make them all the same size. This helps them cook at the same time.

  • Whisk oil and honey in a large bowl. Add the garlic, salt, and pepper. Stir in the dried herbs very well. This glaze adds a lot of flavor.

Coat the Carrots

  • Put the carrots into the mixing bowl. Toss them until they are fully coated. Use your hands to get every spot. Every carrot should look shiny and oily.

Arrange on the Pan

  • Line your pan with parchment paper. Spread the carrots out in one layer. Do not crowd them on the pan. They need space to get crispy edges.

Roast Until Tender
