Ingredients
  

  • 2 cups dried green split peas
  • 8 cups cold water
  • 1 cup chopped carrots
  • 1/2 cup sliced celery
  • 1/4 cup chopped onion
  • 1/4 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Rinse the Peas

  • Start by washing your dried split peas. Use a mesh strainer under cold water. Remove any small stones or dirt.

Boil the Water

  • Fill your large pot with the measured water. Turn the heat to high. Bring the water to a rolling boil.

Add Peas and Veggies

  • Carefully add the peas to the boiling water. Then add the carrots, celery, and onions. Stir them all together well.

Season the Pot

  • Add the thyme and the bay leaf now. Do not add the salt yet. Boiling with salt can make peas tough.

Simmer Low and Slow

  • Turn the heat down to low. Cover the pot with a lid. Let it cook for about ninety minutes.

Check for Softness

  • Check the peas after one hour. They should be very soft. They should start to fall apart easily.

Blend the Soup

  • Remove the bay leaf from the pot. Use your blender to make the soup smooth. You can leave some chunks.

Final Seasoning
