  • Parchment paper
  • Small cookie scoop.
  • Wire cooling rack

Ingredients

  • 1 lb pork sausage bulk.
  • 2 cups baking mix like Bisquick.
  • 1 lb sharp cheddar cheese shredded.
  • 1/2 cup finely chopped celery.
  • 1/2 cup finely chopped onion.
  • 1/2 teaspoon dried rosemary.
  • 2 tablespoons melted butter.

Instructions

  • Preheat your oven to 350°F. Line your baking sheet with parchment paper.
  • Put sausage and baking mix in a bowl. Add the shredded cheese, celery, and onion.
  • Pour in the melted butter and dried rosemary. Mix everything well with your hands.
  • Scoop small amounts of the mixture. Roll them into 1-inch balls.
  • Place balls one inch apart on the sheet. This helps them cook evenly.
  • Bake for 20 to 25 minutes. They should look golden brown and firm.

Notes

  • Grate your own cheese for better melting.
  • Do not overmix the dough.
  • Use room temperature sausage for easier mixing.
  • Add a pinch of cayenne for extra heat.
  • Sauté onions and celery first for softer texture.
